Warm up at Republic

As autumn begins to set in, Republic’s head chef Daniel Serafin has been cooking up a new menu, reflecting that of the cooler months ahead.

Stripping the menu back to basics, but shifting focus to a modernised pub menu, Republic’s tweaking includes old favourites such as their Berkshire Free Range Pork Belly mixed with fresh new additions like the Saltbush Lamb Rump.

The change in weather calls for Republic to incorporate heartier dishes, as everyone is seeking the perfect succulent meat dish to keep them warm during the cooler months. Given Republic is renowned for their tasty meat dishes, a strong influencer of the new menu is their charcoal rotisserie.

Rotating on a daily basis, patrons will have the choice of roast chicken, Greek style lamb or marinated pork straight off the rotisserie onto their plate.

“As the weather cools down, our menu warms up, with our signature charcoal rotisserie becoming the focal point of our latest menu, says Serafin.

“This well-balanced dish is popular all year round, but with the meat changing on a daily basis and with a refined recipe, we’re positive the rotisserie will be the hit this autumn.”

For those wanting a warming flavoursome meal that is a little lighter, Republic’s new menu is filled with traditional pastas such as the Seafood Capellini with fresh prawns, mussels, chilli, tomato, garlic, and capers as well as refreshing salads including the pan fried Haloumi with grains, beetroot & pumpkin seeds.

“At Republic our aim is to ensure our offerings cater to the variety of people that walk through the doors. We want to ensure each and every customer leave with a tummy full of nourishing food, whether that be a chargrilled porterhouse or healthy salad,” says Serafin.
